Funny thing is, I also had a hard time with the Korean name too -is it Oi Muchim (오이무침) or is it Oi Saengche.
Oi means "cucumber" in English, and muchim means "mixed" or "seasoned," so many people simply call this dish "seasoned cucumber". Cucumber, english cucumber, garlic, green onion, hot pepper flakes, kirby, onion, sesame seeds, soy sauce, sugar, toasted sesame oil. I love the refreshing combination of cool cucumbers and hot chile peppers, as in the case of Korean oi muchim.
