Easy Recipe: Yummy Baked Potato Soup
Baked Potato Soup. This soup is made with mashed up baked potatoes, onion, celery, and stock, puréed and then topped with classic baked potato toppings like crumbled crispy bacon, grated cheddar cheese, sour cream, and chives. In a large saucepan over medium heat, melt butter.
Heat oil in large pot over a medium-high heat. Once cooled, peel and mash potatoes, and set aside. Gradually stir in broth and evaporated milk.
Serve it with a green salad and crusty bread to clean up the bowl.
Baked potato soup can be traced back to the Irish who frequently used leftovers and other cheap ingredients to make soup.
